Saludable química

Un argument molt repetit en la publicitat és aquell que associa les coses naturals amb la salut, mentre que es parla despectivament d’aquells productes que són “tot química”. Tots hem vist anuncis en que es promouen aliments lliures de productes artificials, o diferents versions de l’eslògan “menja sa, menja natural”. Com sempre, hi ha alguna cosa de certa, però també és un error greu associar la química amb problemes de salut i càncer i considerar que tot el que és natural ha de ser sa.

Per començar n’hi ha prou en recordar que bona part dels verins més potents tenen un origen perfectament natural. La cicuta, la digitalina, algunes amanites, el curare,... tots són productes d’origen natural, sense rastre d'intervenció artificial, i que ens poden provocar la mort en poques hores.

I per altra banda, intentar abastir d’aliments les grans ciutats d’avui en dia, sense aplicar conservants als aliments seria simplement impossible. La majoria de la població viu lluny dels punts d’origen dels aliments i cal fer alguna cosa perquè es conservin en bon estat mentre es transporten i es distribueixen. La tria és afegir conservants o menjar aliments en diferents graus de degradació.

I no, no tots els additius amb aquelles denominacions tant estranyes provoquen càncer.

Possiblement dessota de tot hi ha la idea bíblica que Deu va posar la natura al servei de l’home, i si això és així, cal assumir que les coses que ofereix la natura han de ser necessàriament les millors.

Però encara que és cert que de les plantes podem obtenir molts productes beneficiosos per a nosaltres, cal recordar que elles ho fan amb un altre objectiu. Els vegetals no tenen cap interès en aportar-nos vitamines, en oferir-nos extractes que ens mantinguin joves o en generar suplements nutricionals per una egocèntrica i sovint irritant espècie de mamífers.

En el fons, moltes vegades, el millor que obtenim dels vegetals per l’alimentació rau en el fet que aporten barreges de molts productes diferents, de manera que podem obtenir tota mena de molècules necessàries pel nostre cos. I això, encara que també continguin productes tòxics que, pel fet de ser naturals no son menys tòxics.

Però la idea que un producte obtingut d'una font natural ha de ser millor que un obtingut per mecanismes artificials pot arribar a extrems ridículs. Hi ha anuncis on es promou la venta de vitamines obtingudes exclusivament de fonts naturals. Sona bé, sona a salut, però una vitamina és simplement una molècula que el nostre cos no pot sintetitzar. I la vitamina C extreta dels cítrics és exactament la mateixa molècula que la que es pugi obtenir en un laboratori. I quan dic exactament és en sentit literal. Les cèl·lules són incapaces de notar la diferència.

Sembla com si la d’origen natural tingués una mena de misteriosa “energia vital” que la fes més bona. Fan que la imaginem en colors i dotada d’una aureola irradiant salut, mentre que la vitamina de síntesi ja la presenten en blanc i negre i mig corrupta.

Naturalment que prefereixo obtenir la vitamina C a partir de les taronges. Però simplement perquè aporten altres coses que també cal ingerir, aigua, sucres, fibra... i sobretot perquè estan molt més bones que una simple pastilleta.

Però quan veig aliment lliures de conservants em pregunto si realment estaran ben conservats. Potser ja han començat els processos de degradació? Hi haurà bacteris colonitzant aquell menjar? La putrefacció, encara que no sigui evident estarà acumulant productes de degradació que, tot i ser naturals, són molt poc sans?

Evidentment, això dependrà del tipus de producte, de l’origen del producte i de l’època de l’any. Si puc estalviar els additius, perfecte, però moltes vegades és millor una dosi adequada de química que farà que un aliment sigui molt més sa.

  2. La veritat és que hi ha ara mateix una mena de psicòsi contra la química... ja veus tu, que serà que no hi ha coses naturals que són fatals per l'organisme... però la qüestió és "tornar als inicis"... en fi, tant avançar per després cagar-nos als pantalons... què hi farem!

    Això de les coses naturals em recorda a l'anunci que fan molt sovint per la tele (sobretot canals poc coneguts) sobre "la baba de caracol" per cuidar-se el cutis, millorar contra l'acné...

    Si és de baba de cargol ha de ser fantàstic, naturalment!! ;)

  4. Encara que estic d’acord amb tú, Dan, hem de reconèixer que la indústria de l’alimentació s’ha currat que no ens refiem d’ella, a base d’enganys i fraus o proves no fetes amb el rigor necessari. Un altre exemple és posant colorants on no faria falta. Els iogurts “La Fageda” no en posen i els de maduixa són blancs, però és la única casa (que jo sàpiga) que ho fa. Ho veus? Un excés de la indústria que no agrada.

    Dues preguntes: es coneix l’efecte a llarg termini dels conservants, si es que en té? I és el mateix donar potitos als nens que no la verdureta acabadeta de fer i triturada? I si no són iguals, tantes diferències n’hi ha? Perquè si no n’hi ha parem de cuinar i donem potitos i menjem tot precuinat i ben conservadet :-)

  5. pd40. Ja, ja!! de vegades ignorar el perill es una comoditat. I si que m'ha passat això que dius. Entra un mal rotllo...

    alepsi.Es veu que els humans som animals d'extrems. Les coses son terriblement dolentes o sanissimament bones. no hi ha terme mig.

    Sants. Això de les babes de cargol pel cutis.... Qui vol tenir un cutis de cargol?

    omalaled. Si que han fet disbarats com per causar una certa prevenció. Però realment hi ha coses que si no tenen el color esperat, la gent no les compra, per bo que sigui. Molts vegetals els tracten amb clorofila per augmentar el color verd. al menys en aquest cas el colorant es "natural".
    De l'efecte a llarg termini? I tant. Si no passa proves de toxicitat a curt i a llarg termini no es pot comercialitzar res pel consum humà. El que passa es que els estudis sempre es fan en cèl.lules aillades o en animals, que no es el mateix. per això, de tant en tant algun el retiren. però en general son prou segurs. i quan diuen que algun provoca càncer, caldria menjar-ne tant, que la indigestió mataria abans.
    I pel que fa a millor recent fet? Sens dubte. Si es possible, millor recent preparat. Molt més bo de gust, i no cal posar conservants perquè no dones temps a que es faci malbé.
    El que es difícil de realitzar es mantenir tota la població de les grans ciutat exclusivament amb aliments sense conservants.

  6. La indústria alimentaria aprofitant-se de l'obsessió que tenim tots plegats per menjar saludable estan medicalitzant els aliments. Ara tot porta complement vitamínics (la llet, els iogurts, la pasta, les galetes, els congelats, etc). Si parles amb qualsevol metge o dietista et dirà que la millor dieta que tots podríem fer és la del sentit comú: menjar amb moderació una mica de tot (i tot vol dir tot). Sí a més ho rematem amb una mica d'exercici el cos ens anirà com un rellotge. Per cert, una mica d'exercici no vol dir anar al gimnàs a destrossar-se un cop o dos per setmana. Vol dir per exemple pujar i baixar a peu les escales del metro (o les de la feina, o les de casa) i caminar de 30 minuts a 1 hora cada dia.

  8. dan, hauries de fer de telepredicador o alguna cosa, no saps la de gent que es creu tot el que li venen a les botigues de dietètica o naturalistes o com es diguin.
    conec tres dones de diferent edad i procedència que prenen totes felices la vitamina c "natural" que els han venut a les botigues aquestes. i no hi ha manera de fer-les entendre que les han timat (no ho venen precisament barat...) que et diuen que no hi ha res a veure amb la química!!!
    trobo innecessaris els "potenciadors de sabor" (eks als de barbacoa i formatges i tal) i molts colorants, jo tampoc necessito (ni prenc) iogurts de color fucsia.
    cal menjar productes naturals no manipulats sempre que sigui possible, ja que als manipuladors se'ls en va tant la mà...

  9. I al final, tot és químic, no? Vull dir que el que volen distingir és si es tracta d'un producte natural o un de sintètic, perquè com tu has dit, la vitamina C de les taronges i la sintètica és exactament la mateixa molècula químcia.
